Everyone else was apparently bringing savory finger foods to eat at my cookie swap, so I felt the need to whip something together.  Aha, canned crab!  Surely I can make a crab dip.  The one in Martha had too many ingredients I didn’t have.  The one in Bittman was a little boring.  Aha, Square Meals!  My very favorite cookbook, because they always have EXACTLY what I want to cook.

This is an incredibly simple recipe lifted from a 1950’s Southern Living.  Cream cheese (I used whipped, because that’s what I had), mayo, canned crab (I used 2 cans), mustard, and a little bit of confectioner’s sugar.  I sprinkled grated cheese on it for good measure.

It turned out really well!  Everyone raved about it and asked for the recipe.  The cheese made it hard to scoop, because it created a solid layer.  So it wasn’t so much a “dunk”, but it worked as long as you used a spoon.  This is definitely a make-again recipe, especially since it’s so simple.

I put the leftovers on bread and stuck it in the oven next day for a delicious crabmeat melt.
